Honey is produced in a cage containing only mountain mint (Pycnanthemum pilosum). The data suggest that the study could have been done in a smaller cage. The honey was water white with a relatively high fructose content and a relatively low sucrose content. The results of a taste panel, relative to aroma, taste and overall quality, were mixed. This suggests to the authors that when making statements about subjective honey qualities, an attempt should be made to indicate the range of perceptions that the honey elicits.
